Garlic Butter Chicken Pasta

Ingredients
  

Chicken and Pasta
  • 1 lb chicken breast cut into 1-inch pieces
  • 8 oz fettuccine or linguine pasta
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
Garlic Butter Sauce
  • 1/2 cup unsalted butter
  • 6 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
Flavor Enhancers
  • 1/2 tsp red pepper flakes optional
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Additional Parmesan for serving

Method
 

Cook Pasta
  1. Bring large pot of salted water to boil
  2. Cook pasta according to package directions until al dente
  3. Reserve 1/2 cup pasta water before draining
  4. Drain pasta and set aside
Cook Chicken
  1. Season chicken pieces with salt, pepper, and Italian seasoning
  2. Heat olive oil in large skillet over medium-high heat
  3. Add chicken and cook until golden brown and cooked through (6-8 minutes)
  4. Remove chicken from skillet and set aside
Make Sauce
  1. Reduce heat to medium, add butter to same skillet
  2. Once melted, add garlic and cook until fragrant (30 seconds)
  3. Add chicken broth and scrape up any browned bits from pan
  4. Stir in heavy cream and bring to simmer
Combine
  1. Return chicken to skillet along with cooked pasta
  2. Add Parmesan cheese, toss to combine
  3. If sauce is too thick, add reserved pasta water a tablespoon at a time
  4. Stir in lemon juice, zest, and parsley
Serve
  1. Season with salt and pepper to taste
  2. Garnish with additional Parmesan and red pepper flakes if desired
  3. Serve immediately while hot
