Fruit Pizza You Must Try

Ingredients
  

For the Sugar Cookie Crust
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
For the Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
For the Fruit Topping
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup sliced kiwi
  • 1/2 cup sliced peaches or mandarin oranges
  • 1/2 cup raspberries

Method
 

Bake the Crust
  1. Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla.
  3. In a separate bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add to the wet ingredients until a dough forms.
  4. Press the dough evenly into the prepared pizza pan. Bake for 10-12 minutes until the edges are very lightly golden. Let cool completely.
Make the Frosting
  1. In a medium bowl, beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until light and fluffy.
Assemble and Decorate
  1. Spread the frosting evenly over the cooled cookie crust, leaving a small border around the edge.
  2. Arrange the fruit in a decorative pattern over the frosting. You can do concentric circles or a random mosaic.
  3. Chill for at least 1 hour before slicing and serving. Enjoy!
