Method
Bake the Crust
- Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla.
- In a separate bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add to the wet ingredients until a dough forms.
- Press the dough evenly into the prepared pizza pan. Bake for 10-12 minutes until the edges are very lightly golden. Let cool completely.
Make the Frosting
- In a medium bowl, beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until light and fluffy.
Assemble and Decorate
- Spread the frosting evenly over the cooled cookie crust, leaving a small border around the edge.
- Arrange the fruit in a decorative pattern over the frosting. You can do concentric circles or a random mosaic.
- Chill for at least 1 hour before slicing and serving. Enjoy!
