Prepare Filling
- In a large bowl, whisk together eggs and milk
- Scramble eggs in large skillet until just set
- In separate pan, sauté peppers and onions until soft
- Combine eggs, sausage, vegetables, and hash browns in large bowl
- Season with cumin, chili powder, salt and pepper
Assemble Burritos
- Warm tortillas briefly to make pliable
- Place 1/2 cup filling in center of each tortilla
- Sprinkle with cheese
- Fold in sides, then roll tightly from bottom
Wrap and Freeze
- Wrap each burrito tightly in foil or parchment
- Place in freezer bags, removing excess air
- Label with date and contents
- Freeze for up to 3 months
Reheating
- From frozen: Remove foil, wrap in paper towel
- Microwave 2-3 minutes, flip, microwave 1-2 minutes more
- Or bake at 375°F for 25-30 minutes until crispy
