Fluffy Fried Croissant Beignets

Ingredients
  

The Beignet Dough
  • 2 cans 8 oz each refrigerated crescent roll dough or croissant dough sheets
  • Vegetable oil for frying about 3-4 cups
  • 1/2 cup powdered sugar for dusting
Optional Dipping Sauces
  • 1/2 cup chocolate hazelnut spread Nutella
  • 1/4 cup heavy cream to thin the spread
  • 1/2 cup raspberry jam warmed

Method
 

Prepare the Dough
  1. Unroll the refrigerated dough onto a lightly floured surface.
  2. If using crescent rolls, press the perforations together to form a solid sheet.
  3. Cut the dough into 2-inch squares or diamonds using a pizza cutter or sharp knife.
Heat the Oil
  1. In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  2. Use a candy thermometer to ensure the temperature is accurate; if the oil is too hot, the beignets will burn before the inside is cooked.
Fry the Beignets
  1. Carefully drop 3-4 dough squares into the hot oil at a time. Do not overcrowd the pan.
  2. Fry for 1-2 minutes per side until they are puffed and golden brown.
  3. Use a slotted spoon to remove the beignets and place them on a paper towel-lined plate to drain.
Finish and Serve
  1. While still warm, toss the beignets in a bowl of powdered sugar or use a sifter to dust them generously.
  2. Serve immediately with your choice of dipping sauces.
