Ingredients
  

Souffle Base
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 cup whole milk
  • 4 large egg yolks
  • 1 tbsp vanilla extract
Meringue
  • 5 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Butter 4 ramekins and coat with sugar.
Making the Base
  1. Whisk flour, sugar, and milk in a saucepan over medium heat until thickened.
  2. Remove from heat and whisk in egg yolks and vanilla.
Whipping Whites
  1. Beat egg whites and cream of tartar until soft peaks form.
  2. Gradually add sugar and beat until stiff peaks form.
Folding and Baking
  1. Gently fold 1/3 of whites into the base, then fold in the rest.
  2. Pour into ramekins and bake for 12-15 minutes until risen.
