- In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Toss the chicken strips with 1 tablespoon of olive oil and the seasoning mixture until evenly coated.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken strips to the skillet and cook for 5-7 minutes until cooked through and slightly browned. Remove chicken and set aside.
- In the same skillet, add the sliced bell peppers and onions. Cook for about 5 minutes until they are tender but still crisp.
- Return the chicken to the skillet and stir everything together for 2 minutes to combine the flavors.
- To assemble the rice bowls, place cooked rice at the bottom of each bowl, then top with the chicken and veggie mixture.
- Garnish with chopped cilantro, shredded cheese, a dollop of sour cream, salsa, and lime wedges as desired.
