Flavor Packed Chicken Fajita Rice Bowl

Ingredients
  

Main Ingredients
  • 1 lb boneless skinless chicken breasts sliced into thin strips
  • 2 bell peppers red and green, sliced
  • 1 large onion sliced
  • 2 cups cooked rice
  • 2 tbsp olive oil
Seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • Salt and black pepper to taste
Toppings
  • 1/2 cup fresh cilantro chopped
  • 1 lime cut into wedges
  • 1/2 cup shredded cheese optional
  • Sour cream optional
  • Salsa optional

Method
 

Instructions
  1. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  2. Toss the chicken strips with 1 tablespoon of olive oil and the seasoning mixture until evenly coated.
  3. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add the chicken strips to the skillet and cook for 5-7 minutes until cooked through and slightly browned. Remove chicken and set aside.
  5. In the same skillet, add the sliced bell peppers and onions. Cook for about 5 minutes until they are tender but still crisp.
  6. Return the chicken to the skillet and stir everything together for 2 minutes to combine the flavors.
  7. To assemble the rice bowls, place cooked rice at the bottom of each bowl, then top with the chicken and veggie mixture.
  8. Garnish with chopped cilantro, shredded cheese, a dollop of sour cream, salsa, and lime wedges as desired.
