Ingredients
  

Grain Base
  • 1 cup cooked quinoa or brown rice
  • 1/2 cup rolled oats
  • 1 cup water or milk
Protein Components
  • 2 eggs soft-boiled or poached
  • 1/4 cup Greek yogurt
  • 2 tbsp nut butter
  • 1 tbsp hemp seeds
Fruits and Vegetables
  • 1/2 avocado sliced
  • 1/2 cup berries
  • 1 cup spinach or kale
  • 1/2 banana sliced
Flavor Enhancers
  • 1 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • Pinch of sea salt
  • Squeeze of lemon juice

Method
 

Prepare Base
  1. If using quinoa or rice, cook according to package directions. Allow to cool slightly.
  2. For oats, combine with water or milk in a saucepan. Cook over medium heat for 5-7 minutes until creamy.
  3. Wilt spinach or kale by quickly sautéing or steaming if desired.
Cook Eggs
  1. For soft-boiled eggs: Bring water to boil, gently add eggs, cook for 6-7 minutes, then transfer to ice water.
  2. For poached eggs: Bring water with a splash of vinegar to simmer, create vortex, add eggs, cook for 3-4 minutes.
Assemble Bowls
  1. Divide grain base between two bowls.
  2. Arrange avocado, berries, banana, and greens attractively around the bowl.
  3. Add eggs, dollop of yogurt, and drizzle of nut butter.
  4. Sprinkle with hemp seeds, cinnamon, and a pinch of sea salt.
  5. Drizzle with honey or maple syrup and a squeeze of lemon juice.
  6. Serve immediately while warm.
