Easy Taco Casserole

Ingredients
  

For the Main Dish
  • 1 pound ground beef
  • 1 small onion diced
  • 1 cup frozen corn
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
For the Seasoning
  • 1 packet taco seasoning mix
  • 1/2 cup water
For the Topping
  • 1 cup crushed tortilla chips
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro
  • Sour cream and salsa for serving

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Dice the onion and drain and rinse the black beans.
  3. Crush the tortilla chips into small pieces and set aside.
Cooking
  1. In a large skillet, cook the ground beef and diced onion over medium heat until beef is browned and onion is soft, about 5-7 minutes.
  2. Drain excess grease from the skillet.
  3. Add the taco seasoning mix and water to the skillet, stirring to combine. Simmer for 3-4 minutes until the sauce thickens.
  4. Stir in the corn and black beans, then remove from heat.
Finishing
  1. Spread the beef mixture evenly in a 9x13 inch baking dish.
  2. Sprinkle shredded cheddar cheese over the top, then add crushed tortilla chips and Monterey Jack cheese.
  3. Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
  4. Remove from oven, garnish with chopped cilantro, and serve with sour cream and salsa on the side.
