Easy Flavorful Chicken Street Tacos

  • 1 lb boneless skinless chicken thighs
  • 8 small corn tortillas
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
Toppings
  • 1/2 cup chopped white onion
  • 1/2 cup chopped fresh cilantro
  • 1 lime cut into wedges
  • Salsa of choice

Method
 

Instructions
  1. In a bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Rub the chicken thighs with olive oil and then coat evenly with the spice mixture.
  3. Heat a skillet over medium-high heat and cook chicken thighs for about 5-7 minutes per side or until fully cooked and slightly charred.
  4. Remove chicken from skillet and let rest for a few minutes before slicing into thin strips.
  5. Warm the corn tortillas in the skillet or on a griddle until pliable.
  6. Assemble the tacos by placing sliced chicken on each tortilla, then topping with chopped onion, cilantro, and a squeeze of lime.
  7. Serve with your favorite salsa and additional lime wedges on the side.
