Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
Cinnamon Filling
  • 1/4 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 tsp ground nutmeg optional
Cream Cheese Glaze
  • 4 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup confectioners' sugar
  • 1/2 tsp vanilla extract
  • 1-2 tbsp milk as needed for consistency

Method
 

Make Dough
  1. In large bowl, cream butter and sugar until light and fluffy
  2. Beat in egg and vanilla until combined
  3. In separate bowl, whisk together flour, baking powder, and salt
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined
  5. Divide dough in half, shape into discs, wrap in plastic, and chill for 1 hour
Prepare Filling
  1. Mix together softened butter, brown sugar, cinnamon, and nutmeg until smooth
  2. Set aside at room temperature for easy spreading
Assemble Cookies
  1. Roll one dough disc into 10x8-inch rectangle on floured surface
  2. Spread half of cinnamon filling evenly over dough
  3. Starting from long side, tightly roll dough into log
  4. Wrap in plastic and repeat with second dough disc
  5. Chill logs for at least 2 hours or until firm
Bake and Glaze
  1. Preheat oven to 350°F and line baking sheets with parchment
  2. Slice logs into 1/2-inch thick rounds
  3. Place on prepared sheets 2 inches apart
  4. Bake for 10-12 minutes until edges are lightly golden
  5. Cool on sheets for 5 minutes, then transfer to wire rack
  6. Whisk together glaze ingredients until smooth
  7. Drizzle over cooled cookies
  8. Let glaze set before serving
