Method
Make Dough
- In large bowl, cream butter and sugar until light and fluffy
- Beat in egg and vanilla until combined
- In separate bowl, whisk together flour, baking powder, and salt
- Gradually add dry ingredients to wet ingredients, mixing until just combined
- Divide dough in half, shape into discs, wrap in plastic, and chill for 1 hour
Prepare Filling
- Mix together softened butter, brown sugar, cinnamon, and nutmeg until smooth
- Set aside at room temperature for easy spreading
Assemble Cookies
- Roll one dough disc into 10x8-inch rectangle on floured surface
- Spread half of cinnamon filling evenly over dough
- Starting from long side, tightly roll dough into log
- Wrap in plastic and repeat with second dough disc
- Chill logs for at least 2 hours or until firm
Bake and Glaze
- Preheat oven to 350°F and line baking sheets with parchment
- Slice logs into 1/2-inch thick rounds
- Place on prepared sheets 2 inches apart
- Bake for 10-12 minutes until edges are lightly golden
- Cool on sheets for 5 minutes, then transfer to wire rack
- Whisk together glaze ingredients until smooth
- Drizzle over cooled cookies
- Let glaze set before serving
