Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
Cheesecake Filling
  • 4 packages 8 oz each cream cheese, softened
  • 1 1/4 cups sugar
  • 1 cup sour cream
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup heavy cream
Strawberry Topping
  • 4 cups fresh strawberries hulled and sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 cup water

Method
 

Prepare Crust
  1. Preheat oven to 325°F
  2. Mix crust ingredients and press into 9-inch springform pan
  3. Bake for 10 minutes, then cool completely
Make Filling
  1. Beat cream cheese and sugar until smooth
  2. Add sour cream and vanilla, beat until combined
  3. Add eggs one at a time, beating just until incorporated
  4. Mix in flour and heavy cream until smooth
  5. Pour over cooled crust
Bake and Cool
  1. Bake for 55-60 minutes until edges are set but center still jiggles slightly
  2. Turn off oven and leave door slightly ajar for 1 hour
  3. Remove from oven and cool completely on wire rack
  4. Refrigerate for at least 6 hours or overnight
Prepare Topping
  1. Combine strawberries, sugar, cornstarch, lemon juice, and water in saucepan
  2. Cook over medium heat until thickened and clear
  3. Cool completely before spreading over cheesecake
