Method
Prepare Crust
- Preheat oven to 325°F
- Mix crust ingredients and press into 9-inch springform pan
- Bake for 10 minutes, then cool completely
Make Filling
- Beat cream cheese and sugar until smooth
- Add sour cream and vanilla, beat until combined
- Add eggs one at a time, beating just until incorporated
- Mix in flour and heavy cream until smooth
- Pour over cooled crust
Bake and Cool
- Bake for 55-60 minutes until edges are set but center still jiggles slightly
- Turn off oven and leave door slightly ajar for 1 hour
- Remove from oven and cool completely on wire rack
- Refrigerate for at least 6 hours or overnight
Prepare Topping
- Combine strawberries, sugar, cornstarch, lemon juice, and water in saucepan
- Cook over medium heat until thickened and clear
- Cool completely before spreading over cheesecake
