Prepare Brownie Base
- Preheat oven to 350°F and grease a 9-inch springform pan.
- Mix melted butter and sugar, then beat in egg and vanilla.
- Whisk in cocoa, flour, and salt until just combined.
- Spread into pan and bake for 15 minutes. Let cool slightly.
Make Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing on low speed.
- Stir in sour cream and vanilla.
- Pour over brownie base and bake for 50-60 minutes in a water bath.
- Cool completely and refrigerate for at least 6 hours.
Prepare Caramel and Assemble
- Melt sugar in a saucepan until amber colored.
- Whisk in butter, then slowly pour in heavy cream.
- Simmer for 1 minute, then stir in sea salt.
- Let caramel cool slightly before pouring over the chilled cheesecake.
