Ingredients
  

Brownie Base
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
Cheesecake Layer
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tbsp vanilla extract
Caramel Topping
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1/2 tsp sea salt

Method
 

Prepare Brownie Base
  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. Mix melted butter and sugar, then beat in egg and vanilla.
  3. Whisk in cocoa, flour, and salt until just combined.
  4. Spread into pan and bake for 15 minutes. Let cool slightly.
Make Cheesecake Filling
  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing on low speed.
  3. Stir in sour cream and vanilla.
  4. Pour over brownie base and bake for 50-60 minutes in a water bath.
  5. Cool completely and refrigerate for at least 6 hours.
Prepare Caramel and Assemble
  1. Melt sugar in a saucepan until amber colored.
  2. Whisk in butter, then slowly pour in heavy cream.
  3. Simmer for 1 minute, then stir in sea salt.
  4. Let caramel cool slightly before pouring over the chilled cheesecake.
