Prepare the Pan
- Heat a small non-stick skillet over medium heat.
- Sprinkle the crumbled feta cheese in a circle in the center of the pan, leaving a small hole in the middle for the egg yolk.
Cook the Egg
- Once the feta starts to melt and sizzle, crack the egg into the center of the feta circle.
- Season the egg with red pepper flakes and dried oregano.
- Cover the pan with a lid for 1-2 minutes to help the egg white set while keeping the yolk runny.
- Cook until the edges of the feta are golden brown and crispy.
Serve
- While the egg is cooking, toast your tortilla or bread and spread with mashed avocado and lime juice.
- Carefully slide the crispy feta egg onto the toast or tortilla.
- Garnish with cilantro and hot honey if desired.
