Crispy Feta Fried Eggs

Ingredients
  

The Core Ingredients
  • 1 large egg
  • 2 tablespoons feta cheese crumbled
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1 small tortilla or slice of sourdough bread
Optional Toppings
  • 1/4 avocado mashed
  • 1 teaspoon fresh lime juice
  • Fresh cilantro for garnish
  • A drizzle of hot honey

Method
 

Prepare the Pan
  1. Heat a small non-stick skillet over medium heat.
  2. Sprinkle the crumbled feta cheese in a circle in the center of the pan, leaving a small hole in the middle for the egg yolk.
Cook the Egg
  1. Once the feta starts to melt and sizzle, crack the egg into the center of the feta circle.
  2. Season the egg with red pepper flakes and dried oregano.
  3. Cover the pan with a lid for 1-2 minutes to help the egg white set while keeping the yolk runny.
  4. Cook until the edges of the feta are golden brown and crispy.
Serve
  1. While the egg is cooking, toast your tortilla or bread and spread with mashed avocado and lime juice.
  2. Carefully slide the crispy feta egg onto the toast or tortilla.
  3. Garnish with cilantro and hot honey if desired.
