Ingredients
  

Doughnut Dough
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 2 large eggs
  • 1/4 cup butter softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Creme Brulee Filling
  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
Topping
  • 1/2 cup granulated sugar
  • Kitchen torch for caramelizing

Method
 

Make Dough
  1. Dissolve yeast in warm milk with a pinch of sugar, let foam (5 minutes)
  2. In mixer bowl, combine flour, sugar, and salt
  3. Add yeast mixture, eggs, butter, and vanilla
  4. Knead until smooth elastic dough forms (5-7 minutes)
  5. Place in greased bowl, cover, let rise until doubled (1 hour)
Make Filling
  1. Whisk egg yolks and sugar until pale and thick
  2. Heat cream until just simmering
  3. Temper egg mixture by slowly adding hot cream while whisking
  4. Return to pan and cook until thickened (170°F)
  5. Strain, add vanilla and salt, chill completely
Fry Doughnuts
  1. Roll dough to 1/2-inch thickness, cut into rounds
  2. Let rise until puffy (30 minutes)
  3. Heat oil to 350°F, fry doughnuts until golden (1-2 minutes per side)
  4. Drain on rack, cool completely
Assemble
  1. Fill doughnuts with chilled creme brulee filling using piping bag
  2. Sprinkle tops with sugar and caramelize with torch
  3. Serve immediately for crisp sugar topping
