Sauté Aromatics
- Heat oil in large pot over medium heat
- Add onion, carrots, celery, cook 5 minutes
- Add mushrooms, cook 5 minutes more
Cook Chicken
- Add chicken, season with salt, pepper, thyme
- Cook until no longer pink, 6-8 minutes
- Add garlic, cook 1 minute until fragrant
Build Soup
- Add broth and broken lasagna noodles
- Bring to simmer, cook until noodles tender
- Stir in kale and cook until wilted
Finish Soup
- Reduce heat, stir in cream and Parmesan
- Season to taste
- Serve with dollop of ricotta and mozzarella
