Ingredients
  

Soup Base
  • 1 lb chicken breast diced
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
Vegetables
  • 2 celery stalks diced
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 tsp thyme
Broth and Cream
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 cups chopped kale
  • 1/2 cup grated Parmesan
Lasagna Elements
  • 8 lasagna noodles broken
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella shredded
  • 2 tbsp basil chopped

Method
 

Sauté Aromatics
  1. Heat oil in large pot over medium heat
  2. Add onion, carrots, celery, cook 5 minutes
  3. Add mushrooms, cook 5 minutes more
Cook Chicken
  1. Add chicken, season with salt, pepper, thyme
  2. Cook until no longer pink, 6-8 minutes
  3. Add garlic, cook 1 minute until fragrant
Build Soup
  1. Add broth and broken lasagna noodles
  2. Bring to simmer, cook until noodles tender
  3. Stir in kale and cook until wilted
Finish Soup
  1. Reduce heat, stir in cream and Parmesan
  2. Season to taste
  3. Serve with dollop of ricotta and mozzarella
