Cook Ravioli
- Cook ravioli according to package directions
- Drain, reserving 1/2 cup pasta water
- Toss with olive oil to prevent sticking
Prepare Sauce
- Heat oil in large skillet over medium heat
- Add garlic, cook until fragrant (30 seconds)
- Add sun-dried tomatoes, cook 1 minute
- Pour in cream and broth, simmer until slightly reduced
Combine
- Whisk in Parmesan until smooth
- Add spinach and cook until wilted
- Add cooked ravioli, toss to coat
- Add pasta water as needed for consistency
Serve
- Season with salt, pepper, and red pepper flakes
- Garnish with basil and pine nuts
- Serve immediately with extra Parmesan
