Ingredients
  

Main
  • 20 oz cheese ravioli fresh or frozen
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes chopped
  • 2 cups spinach fresh
Sauce
  • 2 cups heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
Finish
  • 1/4 cup basil chopped
  • 2 tbsp pine nuts toasted
  • Salt and pepper to taste

Method
 

Cook Ravioli
  1. Cook ravioli according to package directions
  2. Drain, reserving 1/2 cup pasta water
  3. Toss with olive oil to prevent sticking
Prepare Sauce
  1. Heat oil in large skillet over medium heat
  2. Add garlic, cook until fragrant (30 seconds)
  3. Add sun-dried tomatoes, cook 1 minute
  4. Pour in cream and broth, simmer until slightly reduced
Combine
  1. Whisk in Parmesan until smooth
  2. Add spinach and cook until wilted
  3. Add cooked ravioli, toss to coat
  4. Add pasta water as needed for consistency
Serve
  1. Season with salt, pepper, and red pepper flakes
  2. Garnish with basil and pine nuts
  3. Serve immediately with extra Parmesan
