Ingredients
  

Pasta and Protein
  • 8 oz penne pasta
  • 1 lb chicken breast diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
Vegetables
  • 1 bell pepper diced
  • 1/2 red onion diced
  • 1 cup corn kernels
  • 1 can black beans rinsed
Sauce
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup cream cheese
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
Toppings
  • 1/4 cup cilantro chopped
  • Lime wedges for serving
  • Avocado slices optional

Method
 

Cook Components
  1. Cook pasta according to package directions
  2. Season chicken with chili powder, salt and pepper
  3. Heat oil in large skillet, cook chicken until done
Sauté Vegetables
  1. Add bell pepper and onion to skillet, cook 3-4 minutes
  2. Add corn and black beans, cook 2 minutes more
Make Sauce
  1. Add cream, broth, and cream cheese to skillet
  2. Whisk until smooth and simmer until slightly thickened
  3. Stir in cumin and smoked paprika
Combine and Serve
  1. Add cooked pasta to skillet, toss to coat
  2. Garnish with cilantro and serve with lime wedges
  3. Top with avocado if desired
