Method
Cook the Sausage
- Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain excess fat if necessary.
Sauté Aromatics
- Add the minced garlic, sun-dried tomatoes, and red pepper flakes to the skillet with the sausage. Sauté for 1-2 minutes until fragrant.
Make the Sauce
- Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
- Add the gnocchi directly to the skillet. Cover and cook for 3-5 minutes, or until the gnocchi are tender and the sauce has thickened slightly.
Finish and Serve
- Stir in the fresh spinach and Parmesan cheese. Cook for another 1-2 minutes until the spinach is wilted.
- Season with salt and pepper to taste. Serve immediately with extra Parmesan if desired.
