Ingredients

Main Ingredients
  • 1 lb ground Italian sausage mild or spicy
  • 1 lb potato gnocchi store-bought or homemade
  • 2 cups fresh baby spinach
  • 1/2 cup sun-dried tomatoes chopped
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes optional
  • Salt and black pepper to taste

Method

Cook the Sausage
  1. Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain excess fat if necessary.
Sauté Aromatics
  1. Add the minced garlic, sun-dried tomatoes, and red pepper flakes to the skillet with the sausage. Sauté for 1-2 minutes until fragrant.
Make the Sauce
  1. Pour in the chicken broth and heavy cream. Bring to a gentle simmer.
  2. Add the gnocchi directly to the skillet. Cover and cook for 3-5 minutes, or until the gnocchi are tender and the sauce has thickened slightly.
Finish and Serve
  1. Stir in the fresh spinach and Parmesan cheese. Cook for another 1-2 minutes until the spinach is wilted.
  2. Season with salt and pepper to taste. Serve immediately with extra Parmesan if desired.
