Creamy Garlic Parmesan Chicken

Ingredients
  

For the Chicken
  • 4 boneless skinless chicken breasts (6-8 oz each)
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
For the Creamy Garlic Parmesan Sauce
  • 2 tbsp unsalted butter
  • 6 cloves garlic minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese plus more for garnish
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Chicken
  1. Pat chicken breasts dry with paper towels. If chicken breasts are thick, pound them to an even 3/4-inch thickness. Season generously with salt and pepper on both sides.
Sear the Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 6-7 minutes per side, until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken from skillet and set aside on a plate, tented with foil.
Make the Creamy Garlic Parmesan Sauce
  1. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30-60 seconds until fragrant. Do not let it brown.
  2. Pour in chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Stir in Italian seasoning, salt, and pepper.
  3. Reduce heat to low. Gradually stir in grated Parmesan cheese until melted and the sauce is smooth and slightly thickened. Taste and adjust seasoning as needed.
Combine and Serve
  1. Return seared chicken breasts to the skillet, spooning the creamy sauce over them. Garnish with fresh chopped parsley and extra Parmesan cheese before serving. Serve immediately with pasta, rice, or vegetables.

Notes

For best results, use freshly grated Parmesan cheese. Adjust garlic and seasoning to your preference. This dish pairs wonderfully with pasta, mashed potatoes, or steamed green beans.
