Ingredients
  

Chicken and Marinade
  • 4 boneless skinless chicken breasts
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh rosemary chopped
  • Salt and pepper to taste
Cream Sauce
  • 1 tbsp butter
  • 1 shallot finely chopped
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp fresh rosemary chopped
  • ¼ cup grated Parmesan cheese
For Serving
  • Mashed potatoes or pasta
  • Steamed green beans or asparagus
  • Fresh parsley for garnish
  • Lemon wedges for serving

Method
 

Prepare Chicken
  1. Pound chicken breasts to even thickness (about ½ inch)
  2. Combine Dijon mustard, olive oil, garlic, rosemary, salt, and pepper
  3. Coat chicken evenly with marinade
  4. Let sit for 15-30 minutes at room temperature
Cook Chicken
  1. Heat a large skillet over medium-high heat
  2. Add chicken and cook for 5-6 minutes per side until golden
  3. Remove chicken from skillet and set aside
  4. Cover to keep warm
Make Sauce
  1. Reduce heat to medium, add butter to skillet
  2. Sauté shallot until softened, about 2 minutes
  3. Add chicken broth, scraping up browned bits from pan
  4. Stir in cream, Dijon mustard, and rosemary
  5. Simmer until slightly thickened, about 3 minutes
  6. Stir in Parmesan cheese until melted and smooth
Finish and Serve
  1. Return chicken to skillet, spoon sauce over top
  2. Simmer for 2-3 minutes until chicken is heated through
  3. Adjust seasoning with salt and pepper if needed
  4. Garnish with fresh parsley and serve with lemon wedges
  5. Serve over mashed potatoes or pasta with vegetables
