Cranberry Orange Chicken

Ingredients
  

Chicken and Marinade
  • 4 boneless skinless chicken breasts
  • Zest and juice of 1 orange
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Cranberry Orange Sauce
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey or maple syrup
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tsp grated fresh ginger
  • 1/4 tsp cinnamon
  • 1 tbsp cornstarch mixed with 2 tbsp water optional
For Serving
  • Cooked rice or quinoa
  • Orange slices for garnish
  • Fresh thyme or parsley for garnish

Method
 

Marinate Chicken
  1. Pound chicken breasts to even 1/2-inch thickness
  2. Whisk together orange zest, juice, olive oil, garlic, thyme, salt, and pepper
  3. Add chicken and turn to coat
  4. Marinate for at least 30 minutes or up to 4 hours
Cook Chicken
  1. Remove chicken from marinade and pat dry
  2. Heat oven-safe skillet over medium-high heat
  3. Sear chicken for 3-4 minutes per side until golden brown
  4. Transfer skillet to preheated 375°F oven
  5. Bake for 10-12 minutes until internal temperature reaches 165°F
Make Sauce
  1. While chicken bakes, combine cranberries, orange juice, honey, vinegar, soy sauce, ginger, and cinnamon in saucepan
  2. Bring to boil, then reduce heat and simmer for 8-10 minutes until cranberries burst and sauce thickens
  3. For thicker sauce, stir in cornstarch slurry and simmer for 1 minute
Finish and Serve
  1. Remove chicken from oven and let rest for 5 minutes
  2. Slice chicken and arrange on serving platter
  3. Spoon cranberry orange sauce over top
  4. Garnish with orange slices and fresh herbs
  5. Serve with rice or quinoa to absorb the delicious sauce
