  • 2 cups cooked chicken shredded or diced (rotisserie chicken works best)
  • 1 8 ounce package cream cheese, softened
  • ½ cup sour cream
  • 1 1 ounce packet ranch seasoning mix
  • 1 cup shredded cheddar cheese plus more for topping
  • ½ cup cooked bacon crumbled
  • 1 16 ounce bag frozen tater tots
  • Optional additions: ¼ cup chopped green onions or chives for garnish

Method
 

Prepare the Chicken Mixture
  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Mix until smooth and well combined. Add the shredded or diced cooked chicken, 1 cup of shredded cheddar cheese, and half of the crumbled bacon to the bowl. Stir gently until all ingredients are evenly coated.
Assemble the Casserole
  1. Spread the chicken mixture evenly into a 9x13 inch baking dish. Arrange the frozen tater tots in a single layer over the chicken mixture, covering the entire surface of the casserole. Ensure the tater tots are not thawed, as this helps them crisp up during baking.
Bake to Golden Perfection
  1. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the filling is bubbly. During the last 5-10 minutes of baking, sprinkle the remaining shredded cheddar cheese over the tater tots and continue baking until the cheese is melted and bubbly.
Garnish and Serve
  1. Once baked, remove the casserole from the oven. Sprinkle the remaining crumbled bacon over the top. If desired, garnish with chopped green onions or chives for a fresh touch. Let the casserole rest for 5-10 minutes before serving to allow it to set. Serve hot and watch it disappear!

Notes

Use rotisserie chicken for convenience. Soften cream cheese. Don't thaw tots for crispiness. Drain bacon grease. Customize cheese and add vegetables. Can prepare chicken mixture ahead of time. Freezes well.
