Ingredients
  

Seafood
  • 1 lb shrimp shells reserved
  • 8 oz lump crabmeat
  • 1/4 cup brandy
  • 1 tbsp olive oil
Aromatics
  • 1 fennel bulb chopped
  • 1 leek sliced
  • 3 garlic cloves
  • 2 tbsp tomato paste
Broth
  • 4 cups fish stock
  • 1 cup dry white wine
  • 1 bay leaf
  • 1 tsp saffron threads
Finish
  • 1 cup heavy cream
  • 2 tbsp sherry
  • 1/4 cup parsley
  • Cayenne pepper

Method
 

Prepare Seafood
  1. Sauté shrimp shells in oil
  2. Deglaze with brandy
  3. Simmer 10 minutes, strain
Build Base
  1. Sauté fennel and leek
  2. Add garlic and tomato paste
  3. Cook until fragrant
Simmer
  1. Add stock, wine and shells
  2. Incorporate saffron and bay
  3. Simmer 30 minutes, strain
Finish
  1. Purée solids with cream
  2. Return to pot with seafood
  3. Garnish with parsley
