  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
Wet Ingredients
  • 1 cup pumpkin puree not pumpkin pie filling
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/3 cup milk or plant-based alternative
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts pecans or walnuts
  • 1/2 cup raisins or dried cranberries
Topping (Optional)
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped pecans

Method
 

Preparation
  1. Preheat oven to 375°F (190°C)
  2. Line a 12-cup muffin tin with paper liners or grease thoroughly
  3. In a large bowl, whisk together all dry ingredients until well combined
Combine Wet Ingredients
  1. In a separate bowl, whisk together pumpkin puree, eggs, oil, milk, and vanilla until smooth
  2. Pour wet ingredients into dry ingredients and stir until just combined - do not overmix
  3. Fold in any optional add-ins if using
Bake
  1. Divide batter evenly among muffin cups, filling each about 3/4 full
  2. If using topping, combine sugar and cinnamon and sprinkle over muffins along with chopped nuts
  3. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean
  4. Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely
