Preparation
- Preheat oven to 375°F (190°C)
- Line a 12-cup muffin tin with paper liners or grease thoroughly
- In a large bowl, whisk together all dry ingredients until well combined
Combine Wet Ingredients
- In a separate bowl, whisk together pumpkin puree, eggs, oil, milk, and vanilla until smooth
- Pour wet ingredients into dry ingredients and stir until just combined - do not overmix
- Fold in any optional add-ins if using
Bake
- Divide batter evenly among muffin cups, filling each about 3/4 full
- If using topping, combine sugar and cinnamon and sprinkle over muffins along with chopped nuts
- Bake for 20-25 minutes until a toothpick inserted in the center comes out clean
- Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely
