Ingredients
  

Dough
  • 2 cups whole wheat pastry flour
  • 1/2 cup vanilla protein powder
  • 1 packet instant yeast
  • 1 cup warm almond milk
  • 2 tbsp honey
  • 1/4 cup Greek yogurt
  • 1 egg
  • 1 tsp cinnamon
Filling
  • 1/4 cup coconut sugar
  • 2 tbsp cinnamon
  • 1/4 cup crushed walnuts
  • 2 tbsp sugar-free maple syrup
Protein Glaze
  • 1/4 cup Greek yogurt
  • 2 tbsp protein powder
  • 1 tbsp almond milk
  • 1/2 tsp vanilla extract

Method
 

Prepare Dough
  1. Whisk together warm almond milk, honey and yeast
  2. Let sit for 5 minutes until foamy
  3. Add Greek yogurt, egg, and mix well
  4. In separate bowl, combine flour, protein powder, and cinnamon
  5. Gradually add dry ingredients to wet ingredients
  6. Knead for 5 minutes until smooth elastic dough forms
First Rise
  1. Place dough in oiled bowl, cover with towel
  2. Let rise in warm place for 1 hour until doubled
  3. Punch down dough and roll into 9x12 rectangle
Add Filling
  1. Brush dough with maple syrup
  2. Mix coconut sugar, cinnamon and walnuts
  3. Sprinkle filling evenly over dough
  4. Roll tightly from long end into log
Bake
  1. Cut into 9 equal pieces
  2. Place in parchment-lined baking dish
  3. Cover and let rise 30 minutes
  4. Bake at 350°F for 20-25 minutes until golden
Glaze and Serve
  1. Whisk together glaze ingredients until smooth
  2. Drizzle over slightly cooled rolls
  3. Serve warm for best texture and flavor
