  • 1/2 tsp chili powder
  • 1/4 cup cilantro
  • Salt and pepper
Assembly
  • 8 corn tortillas
  • 1 cup cheese
  • Oil for frying
  • Toothpicks
Toppings
  • Avocado crema
  • Pico de gallo
  • Radish slices

Method
 

Prep
  1. Cook potatoes until tender
  2. Scramble eggs with seasonings
  3. Mix with beans and salsa
Assemble
  1. Warm tortillas
  2. Add filling and cheese
  3. Roll tightly, secure with toothpick
Cook
  1. Heat 1/2 inch oil to 350°F
  2. Fry seam-side down first
