Make Broth
- Simmer carcass with vegetables 3 hours
- Strain, discard solids
- Skim fat from broth
Sauté Vegetables
- Sauté carrots and parsnips 5 minutes
- Add garlic, cook 1 minute
Simmer Soup
- Add broth, corn, beans, seasonings
- Simmer 20 minutes until vegetables tender
Finish
- Add turkey and noodles
- Cook 10 minutes until noodles tender
- Stir in parsley, season to taste
