Ingredients
  

Filling
  • 4 large eggs
  • 4 egg whites
  • 2 cups fresh spinach chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup red onion finely diced
  • 1 teaspoon dried dill
  • Salt and pepper to taste
Assembly
  • 4 whole wheat tortillas 10-inch
  • Cooking spray or oil
  • Optional: hot sauce for serving

Method
 

Prepare Filling
  1. In a bowl, whisk together eggs and egg whites
  2. Stir in spinach, feta, sun-dried tomatoes, onion, and dill
  3. Season with salt and pepper
Cook Egg Mixture
  1. Heat a non-stick skillet over medium heat
  2. Pour in egg mixture and cook, stirring occasionally
  3. Cook until eggs are set but still moist (4-5 minutes)
  4. Remove from heat and let cool slightly
Assemble Wraps
  1. Warm tortillas briefly to make them pliable
  2. Divide egg mixture among tortillas, placing it in the center
  3. Fold in sides, then roll tightly from the bottom up

  1. Heat the same skillet over medium heat
  2. Place wraps seam-side down and cook until golden (2-3 minutes per side)
  3. Serve immediately or wrap for later
