Muffin Base
  • 6 cups bread cubes day-old French or brioche
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
Cinnamon Sugar Topping
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 tbsp cinnamon
For Serving
  • Maple syrup
  • Powdered sugar
  • Fresh berries

Method
 

Prepare Bread
  1. Preheat oven to 350°F and grease a 12-cup muffin tin.
  2. Cut bread into 1-inch cubes and divide evenly among muffin cups.
Make Egg Mixture
  1. In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, and cinnamon.
  2. Pour evenly over bread cubes, pressing down to ensure absorption.
Bake
  1. Bake for 18-20 minutes until set and golden brown.
  2. Let cool in pan for 5 minutes before removing.
Add Topping
  1. Brush muffins with melted butter.
  2. Combine sugar and cinnamon in a shallow bowl.
  3. Dip tops of muffins in cinnamon sugar mixture.
