Cinnamon Sugar French Toast Cubes

  • 6 slices bread cut into 1-inch cubes
  • 3 large eggs
  • 1/2 cup milk
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. In a large bowl, whisk together eggs, milk, 1 tablespoon sugar, 1 teaspoon cinnamon, and vanilla extract until combined.
  2. Add the bread cubes to the egg mixture and gently stir to coat all the pieces. Let soak for 1-2 minutes.
Cooking
  1. Heat a large skillet or griddle over medium heat and add butter or oil to coat the surface.
  2. Using a slotted spoon, transfer the soaked bread cubes to the skillet, spacing them out evenly.
  3. Cook for 3-4 minutes, stirring occasionally, until the cubes are golden brown and cooked through.
  4. In a small bowl, mix together 1/4 cup sugar and 1 teaspoon cinnamon.
  5. Sprinkle the cinnamon sugar mixture over the cooked French toast cubes while they are still warm.
Serving
  1. Serve the cinnamon sugar French toast cubes warm with syrup, fresh fruit, or yogurt as desired.
