Preparation
- Open the can of cinnamon rolls and set aside the icing container.
- Cut each individual cinnamon roll into 4 equal-sized quarters (bites).
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and 1/2 tsp cinnamon until well combined.
Cooking
- Heat a large non-stick skillet over medium heat and melt 1 tbsp of butter.
- Dip several cinnamon roll bites into the egg mixture, ensuring they are coated on all sides.
- Place the bites in the skillet, being careful not to overcrowd the pan.
- Fry for 2-3 minutes per side, turning with tongs, until they are golden brown and cooked through.
- Repeat with the remaining bites, adding more butter to the skillet as needed.
Coating
- In a small bowl, mix the 1/4 cup sugar and 1 tsp cinnamon.
- While the bites are still warm, toss them in the cinnamon sugar mixture until evenly coated.
Finishing
- Transfer the warm bites to a serving plate.
- Drizzle the reserved icing over the top, or serve it on the side for dipping.
- Serve immediately with maple syrup and fresh berries if desired.
