Cinnamon Roll French Toast Bites

Ingredients
  

For the French Toast Bites
  • 1 can 12.4 oz refrigerated cinnamon rolls (8 count), with icing
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter for frying
For the Cinnamon Sugar Coating
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
For Serving
  • Reserved icing from the cinnamon roll can
  • Maple syrup optional
  • Fresh berries optional

Method
 

Preparation
  1. Open the can of cinnamon rolls and set aside the icing container.
  2. Cut each individual cinnamon roll into 4 equal-sized quarters (bites).
  3. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and 1/2 tsp cinnamon until well combined.
Cooking
  1. Heat a large non-stick skillet over medium heat and melt 1 tbsp of butter.
  2. Dip several cinnamon roll bites into the egg mixture, ensuring they are coated on all sides.
  3. Place the bites in the skillet, being careful not to overcrowd the pan.
  4. Fry for 2-3 minutes per side, turning with tongs, until they are golden brown and cooked through.
  5. Repeat with the remaining bites, adding more butter to the skillet as needed.
Coating
  1. In a small bowl, mix the 1/4 cup sugar and 1 tsp cinnamon.
  2. While the bites are still warm, toss them in the cinnamon sugar mixture until evenly coated.
Finishing
  1. Transfer the warm bites to a serving plate.
  2. Drizzle the reserved icing over the top, or serve it on the side for dipping.
  3. Serve immediately with maple syrup and fresh berries if desired.
