Marinate and Cook Shrimp
- In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and lime juice. Let marinate for 5-10 minutes.
- Heat a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink, opaque, and slightly charred. Do not overcook.
Prepare Cilantro Lime Slaw
- In a separate bowl, combine the shredded cabbage, cilantro, mayonnaise (or yogurt), lime juice, salt, and pepper. Toss well to coat and set aside.
Warm Tortillas
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds.
Assemble Tacos
- Layer the warm tortillas with a generous spoonful of the cilantro lime slaw.
- Top with 4-5 pieces of the seasoned shrimp.
- Garnish with sliced avocado and a sprinkle of cotija cheese. Serve immediately with extra lime wedges.
