Cilantro Lime Shrimp Tacos

Ingredients
  

For the Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • Juice of 1/2 lime
For the Cilantro Lime Slaw
  • 2 cups shredded cabbage green and red mix
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp mayonnaise or Greek yogurt
  • Juice of 1/2 lime
  • Pinch of salt and pepper
For Assembly
  • 8 small corn or flour tortillas
  • 1 avocado sliced or diced
  • 1/4 cup crumbled cotija cheese
  • Lime wedges for serving

Method
 

Marinate and Cook Shrimp
  1. In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and lime juice. Let marinate for 5-10 minutes.
  2. Heat a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink, opaque, and slightly charred. Do not overcook.
Prepare Cilantro Lime Slaw
  1. In a separate bowl, combine the shredded cabbage, cilantro, mayonnaise (or yogurt), lime juice, salt, and pepper. Toss well to coat and set aside.
Warm Tortillas
  1. Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds.
Assemble Tacos
  1. Layer the warm tortillas with a generous spoonful of the cilantro lime slaw.
  2. Top with 4-5 pieces of the seasoned shrimp.
  3. Garnish with sliced avocado and a sprinkle of cotija cheese. Serve immediately with extra lime wedges.
