Method
Marinate Chicken
- In bowl, whisk together cilantro, lime juice, zest, garlic, cumin, paprika, oil, salt, and pepper
- Place chicken in resealable bag or dish, add marinade
- Refrigerate at least 2 hours or overnight
Cook Chicken
- Preheat oven to 425°F or heat grill to medium-high
- Remove chicken from marinade, letting excess drip off
- For oven: Place skin-side up on baking sheet. Bake 25-30 minutes until internal temperature reaches 165°F
- For grill: Cook skin-side down first, 6-8 minutes per side until cooked through
Make Sauce and Serve
- Whisk together all sauce ingredients until smooth
- Serve chicken with sauce, lime wedges, and fresh cilantro
- Accompany with rice and vegetables if desired
