Ingredients
  

Chicken and Marinade
  • 8 bone-in skin-on chicken thighs
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 2 tbsp lime zest
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
Cilantro Lime Sauce
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 small garlic clove minced
  • Salt and pepper to taste
For Serving
  • Lime wedges
  • Fresh cilantro leaves
  • Cooked rice or quinoa
  • Grilled vegetables

Method
 

Marinate Chicken
  1. In bowl, whisk together cilantro, lime juice, zest, garlic, cumin, paprika, oil, salt, and pepper
  2. Place chicken in resealable bag or dish, add marinade
  3. Refrigerate at least 2 hours or overnight
Cook Chicken
  1. Preheat oven to 425°F or heat grill to medium-high
  2. Remove chicken from marinade, letting excess drip off
  3. For oven: Place skin-side up on baking sheet. Bake 25-30 minutes until internal temperature reaches 165°F
  4. For grill: Cook skin-side down first, 6-8 minutes per side until cooked through
Make Sauce and Serve
  1. Whisk together all sauce ingredients until smooth
  2. Serve chicken with sauce, lime wedges, and fresh cilantro
  3. Accompany with rice and vegetables if desired
