Ingredients
  

Cookie Base
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
Cinnamon Sugar Coating
  • 1/2 cup granulated sugar
  • 1 tbsp cinnamon
  • 1/4 cup unsalted butter melted

Method
 

Prepare Dough
  1. Cream together butter and sugars until light and fluffy
  2. Beat in egg and vanilla extract
  3. In separate bowl, whisk together flour and cinnamon
  4. Gradually add dry ingredients to wet ingredients
  5. Divide dough in half, wrap in plastic, and chill for 30 minutes
Make Filling
  1. Beat cream cheese until smooth
  2. Add sugar and mix until combined
  3. Beat in egg yolk and vanilla extract
  4. Transfer to piping bag and set aside
Assemble Cookies
  1. Preheat oven to 350°F and line baking sheets with parchment
  2. Roll dough into 1-inch balls and flatten slightly
  3. Pipe cheesecake filling onto center of each cookie
  4. Top with another flattened dough ball, sealing edges
  5. Bake for 12-15 minutes until edges are golden
Coat and Serve
  1. Combine sugar and cinnamon in shallow bowl
  2. Brush warm cookies with melted butter
  3. Roll in cinnamon sugar mixture
  4. Cool completely on wire rack before serving
