Method
Prepare Dough
- Cream together butter and sugars until light and fluffy
- Beat in egg and vanilla extract
- In separate bowl, whisk together flour and cinnamon
- Gradually add dry ingredients to wet ingredients
- Divide dough in half, wrap in plastic, and chill for 30 minutes
Make Filling
- Beat cream cheese until smooth
- Add sugar and mix until combined
- Beat in egg yolk and vanilla extract
- Transfer to piping bag and set aside
Assemble Cookies
- Preheat oven to 350°F and line baking sheets with parchment
- Roll dough into 1-inch balls and flatten slightly
- Pipe cheesecake filling onto center of each cookie
- Top with another flattened dough ball, sealing edges
- Bake for 12-15 minutes until edges are golden
Coat and Serve
- Combine sugar and cinnamon in shallow bowl
- Brush warm cookies with melted butter
- Roll in cinnamon sugar mixture
- Cool completely on wire rack before serving
