Chicken Parmesan Casserole

Ingredients
  

For the Main Dish
  • 4 cups cooked chicken shredded
  • 3 cups cooked pasta penne or rigatoni
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Sauce
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional
For the Topping
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Italian seasoned breadcrumbs

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, drain, and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
Cooking
  1. Add marinara sauce, dried oregano, and crushed red pepper flakes to the skillet with garlic; simmer for 5 minutes to blend flavors.
  2. In a large mixing bowl, combine shredded chicken, cooked pasta, sauce mixture, 1 1/2 cups mozzarella, Parmesan, garlic powder, salt, pepper, and chopped basil. Mix well until evenly combined.
  3. Transfer the mixture to a greased 9x13 inch casserole dish and spread it out evenly.
Finishing
  1. Sprinkle the topping evenly over the casserole: 1/2 cup mozzarella, 1/4 cup Parmesan, and breadcrumbs.
  2. Bake uncovered in the preheated oven for 30-35 minutes or until the cheese is bubbly and golden brown on top.
  3. Remove from oven and let rest for 5 minutes before serving.
