Ingredients
  

Chicken Preparation
  • 4 chicken breast halves pounded to 1/2-inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
For Assembly
  • 2 cups marinara sauce
  • 8 oz mozzarella cheese sliced or shredded
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
For Serving
  • 1 lb spaghetti cooked al dente
  • Fresh basil for garnish

Method
 

Prepare Chicken
  1. Place chicken between plastic wrap and pound to even thickness.
  2. Set up three shallow dishes: flour seasoned with salt/pepper, beaten eggs, and breadcrumbs mixed with Parmesan and Italian seasoning.
  3. Dredge each chicken breast in flour, then egg, then breadcrumb mixture, pressing to adhere.
Cook Chicken
  1. Heat olive oil and butter in large oven-safe skillet over medium heat.
  2. Cook chicken for 4-5 minutes per side until golden brown and cooked through.
  3. Remove from skillet and drain on paper towels.
Assemble and Bake
  1. Preheat broiler.
  2. Return chicken to skillet and top each breast with marinara sauce.
  3. Add mozzarella cheese and sprinkle with Parmesan.
  4. Broil for 2-3 minutes until cheese is melted and bubbly.
Serve
  1. Serve chicken over cooked spaghetti with additional sauce.
  2. Garnish with fresh basil leaves.
