Ingredients
  

Noodles
  • 8 oz rice noodles
  • Hot water for soaking
Sauce
  • 3 tbsp fish sauce
  • 3 tbsp tamarind paste
  • 3 tbsp palm sugar
  • 2 tbsp rice vinegar
Stir-fry
  • 2 chicken breasts sliced
  • 3 tbsp oil
  • 3 garlic cloves minced
  • 2 eggs
  • 1 cup bean sprouts
  • 1/2 cup crushed peanuts
Garnish
  • Lime wedges
  • Cilantro
  • Green onions
  • Chili flakes

Method
 

Prep
  1. Soak noodles in hot water 30 minutes
  2. Mix sauce ingredients
  3. Prep all ingredients
Cook Chicken
  1. Stir-fry chicken in hot oil 4 minutes
  2. Add garlic, cook 30 seconds
  3. Push to side
Scramble Eggs
  1. Add eggs to empty space
  2. Scramble until set
  3. Combine with chicken
Finish
  1. Add noodles and sauce
  2. Toss 2 minutes until coated
  3. Add bean sprouts and peanuts
  4. Serve with garnishes
