Ingredients
  

Chicken and Marinade
  • 4 boneless skinless chicken breasts
  • 1/4 cup milk or buttermilk
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
Sauce Ingredients
  • 2 tbsp butter
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • 2 cloves garlic minced
  • 1 tsp cornstarch optional, for thickening
  • 1 tbsp water if using cornstarch
For Serving
  • Cooked pasta fettuccine or linguine
  • Additional Parmesan cheese
  • Fresh basil leaves for garnish
  • Steamed vegetables broccoli or asparagus

Method
 

Prepare Chicken
  1. Pound chicken breasts to even thickness (about 1/2 inch)
  2. Marinate in milk with garlic powder, onion powder, salt, and pepper for 15 minutes
  3. Pat chicken dry with paper towels
Cook Chicken
  1. Heat olive oil in a large skillet over medium-high heat
  2. Cook chicken for 5-7 minutes per side until golden and cooked through
  3. Remove chicken from skillet and set aside
Make Sauce
  1. Reduce heat to medium and add butter to the same skillet
  2. Sauté garlic for 30 seconds until fragrant
  3. Add chicken broth and bring to a simmer, scraping up browned bits
  4. Stir in heavy cream and Parmesan cheese
  5. Simmer for 3-5 minutes until slightly thickened
  6. If desired, mix cornstarch with water and stir into sauce to thicken further
Finish and Serve
  1. Return chicken to the skillet and spoon sauce over it
  2. Stir in fresh basil and cook for 1-2 more minutes
  3. Season with additional salt and pepper to taste
  4. Serve over pasta with extra Parmesan and basil garnish
