Ingredients
  

Steak Preparation
  • 4 cube steaks about 1.5 lbs total
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
Wet Ingredients
  • 2 large eggs
  • 1/4 cup milk
  • 1 tbsp hot sauce
Cream Gravy
  • 1/4 cup pan drippings
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste
For Frying
  • 1/2 cup vegetable oil
  • 2 tbsp butter

Method
 

Prepare Steaks
  1. Place cube steaks between plastic wrap and gently pound to 1/4-inch thickness.
  2. In a shallow dish, mix flour, garlic powder, onion powder, paprika, cayenne, salt, and pepper.
  3. In another dish, whisk together eggs, milk, and hot sauce.
  4. Dredge each steak in flour mixture, then egg mixture, then flour again, pressing to adhere.
Fry Steaks
  1. Heat oil and butter in a large skillet over medium-high heat until shimmering.
  2. Fry steaks in batches for 3-4 minutes per side until golden brown and cooked through.
  3. Transfer to paper towel-lined plate to drain.
Make Gravy
  1. Pour off all but 1/4 cup of pan drippings, keeping the browned bits.
  2. Whisk in flour and cook for 1 minute until golden.
  3. Gradually whisk in milk until smooth.
  4. Cook, stirring constantly, until thickened (5-7 minutes).
  5. Season with salt and pepper.
Serve
  1. Serve steaks hot with gravy poured over the top.
  2. Traditional sides include mashed potatoes and green beans.
