Ingredients
  

Base
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 chicken breasts
Broth
  • 4 cups chicken broth
  • 15 oz diced tomatoes
  • 8 oz tomato sauce
  • 1 cup corn kernels
Seasoning
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
Finish
  • 1 cup Monterey Jack cheese
  • 1/4 cup cilantro
  • Tortilla strips
  • Avocado slices

Method
 

Sauté
  1. Sauté onions and garlic in oil
  2. Add chicken, brown both sides
Simmer
  1. Add broth, tomatoes and seasoning
  2. Simmer 20 minutes until chicken cooked
Shred
  1. Remove chicken, shred
  2. Return to pot with corn
Serve
  1. Ladle into bowls
  2. Top with cheese, cilantro, avocado and tortilla strips
