Prepare Filling
- Brown ground beef in large skillet over medium heat
- Add onion and cook until softened
- Stir in garlic and seasoning packet, cook 1 minute
- Add 1/2 cup water and simmer for 10 minutes
- Stir in rice, beans, and corn, heat through
- Remove from heat and stir in 1 cup cheese
Assemble Burritos
- Warm tortillas according to package directions
- Spoon filling onto center of each tortilla
- Top with remaining cheese and desired toppings
- Fold sides inward, then roll tightly from bottom
Serve
- Serve immediately with additional toppings on side
- Can be grilled seam-side down for crispy exterior
- Optionally, top with enchilada sauce and bake until bubbly
