Method
Prepare Chicken
- Toss chicken strips with Cajun seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5-7 minutes until cooked through and slightly charred.
- Drizzle with 1 tbsp honey during the last minute of cooking. Remove from skillet.
Cook Vegetables
- In the same skillet, add additional oil if needed.
- Add bell pepper and onion. Cook for 4-5 minutes until slightly softened.
- Add garlic and cook for 1 minute until fragrant.
- Remove vegetables from skillet.
Prepare Rice
- Fluff cooked rice with a fork.
- Stir in butter, lemon juice, and parsley until combined.
- Season with salt and pepper to taste.
Make Sauce
- In a small bowl, whisk together honey, hot sauce, lemon juice, and Cajun seasoning.
- If desired, warm slightly in the microwave or in a small saucepan.
Assemble Bowls
- Divide seasoned rice among four bowls.
- Top with cooked vegetables and chicken strips.
- Drizzle with sauce and garnish with green onions, lemon wedges, and parsley.
- Serve immediately.
