Ingredients
  

For the Chicken
  • 1.5 lbs chicken breast cut into strips
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp honey
For the Rice
  • 2 cups cooked rice
  • 1 tbsp butter
  • 1 tsp lemon juice
  • 2 tbsp chopped parsley
For the Vegetables
  • 1 bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
For the Sauce
  • 1/4 cup honey
  • 2 tbsp hot sauce
  • 1 tbsp lemon juice
  • 1 tsp Cajun seasoning
Garnish
  • Sliced green onions
  • Lemon wedges
  • Fresh parsley

Method
 

Prepare Chicken
  1. Toss chicken strips with Cajun seasoning until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5-7 minutes until cooked through and slightly charred.
  4. Drizzle with 1 tbsp honey during the last minute of cooking. Remove from skillet.
Cook Vegetables
  1. In the same skillet, add additional oil if needed.
  2. Add bell pepper and onion. Cook for 4-5 minutes until slightly softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Remove vegetables from skillet.
Prepare Rice
  1. Fluff cooked rice with a fork.
  2. Stir in butter, lemon juice, and parsley until combined.
  3. Season with salt and pepper to taste.
Make Sauce
  1. In a small bowl, whisk together honey, hot sauce, lemon juice, and Cajun seasoning.
  2. If desired, warm slightly in the microwave or in a small saucepan.
Assemble Bowls
  1. Divide seasoned rice among four bowls.
  2. Top with cooked vegetables and chicken strips.
  3. Drizzle with sauce and garnish with green onions, lemon wedges, and parsley.
  4. Serve immediately.
