Cajun Grilled Chicken with Alabama White Sauce

Ingredients
  

Cajun Chicken
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Alabama White Sauce
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon prepared horseradish
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste

Method
 

Prepare Cajun Chicken
  1. In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
  2. Rub olive oil over the chicken breasts to coat evenly.
  3. Sprinkle the Cajun spice blend evenly over both sides of the chicken, pressing lightly to adhere.
  4. Preheat the grill to medium-high heat.
Grill the Chicken
  1. Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  2. Remove from the grill and let rest for 5 minutes.
Make Alabama White Sauce
  1. In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, and sugar until smooth.
  2. Add garlic powder, onion powder, cayenne pepper, salt, and black pepper, adjusting seasoning to taste.
  3. Chill the sauce in the refrigerator for at least 10 minutes before serving.
Serve
  1. Slice the grilled Cajun chicken breasts.
  2. Drizzle generously with Alabama White Sauce or serve it on the side.
  3. Enjoy with your favorite sides such as grilled vegetables or coleslaw.
