Buffalo Chicken Roll Ups

Ingredients
  

For the Main Dish
  • 2 cups cooked shredded chicken
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onions
For the Sauce
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons ranch dressing
  • 2 tablespoons cream cheese softened
For Garnish
  • Chopped fresh parsley or cilantro optional

Method
 

Preparation
  1. In a medium bowl, combine the shredded chicken with buffalo wing sauce and cream cheese, mixing well until fully incorporated.
  2. Chop the celery and green onions finely, then fold them into the chicken mixture along with the shredded cheddar cheese.
  3. Lay out each flour tortilla flat on a clean surface to prepare for assembly.
Cooking
  1. Evenly spread the chicken mixture over each tortilla, leaving about an inch border around the edges.
  2. Carefully roll each tortilla tightly from one end to the other to form roll ups.
  3. Place the roll ups seam-side down on a baking sheet and bake in a preheated oven at 375°F (190°C) for 8-10 minutes until warmed through and cheese is melted.
Finishing
  1. Remove the roll ups from the oven and let them cool slightly before slicing into 1-inch pieces.
  2. Serve warm with ranch dressing on the side for dipping and garnish with chopped parsley or cilantro if desired.
