Buffalo Chicken Egg Rolls

Ingredients
  

For the Filling
  • 2 cups cooked chicken shredded
  • 1/2 cup buffalo hot sauce
  • 1/4 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar or mozzarella
  • 2 green onions sliced
For the Wraps
  • 10-12 egg roll wrappers
  • 1 egg beaten (for sealing)
  • Vegetable oil for frying

Method
 

Preparation
  1. In a large bowl, mix shredded chicken, buffalo sauce, dressing, cheese, and green onions.
Rolling
  1. Place an egg roll wrapper on a flat surface in a diamond shape.
  2. Spoon 2-3 tablespoons of filling onto the center.
  3. Fold the bottom corner up, then fold in the sides, and roll tightly.
  4. Seal the top corner with a dab of beaten egg.
Finishing
  1. Heat oil in a skillet or deep fryer to 350°F (175°C).
  2. Fry egg rolls for 3-5 minutes, turning occasionally, until golden and crispy.
  3. Drain on paper towels and serve with extra ranch for dipping.
