Preparation
- In a large bowl, mix shredded chicken, buffalo sauce, dressing, cheese, and green onions.
Rolling
- Place an egg roll wrapper on a flat surface in a diamond shape.
- Spoon 2-3 tablespoons of filling onto the center.
- Fold the bottom corner up, then fold in the sides, and roll tightly.
- Seal the top corner with a dab of beaten egg.
Finishing
- Heat oil in a skillet or deep fryer to 350°F (175°C).
- Fry egg rolls for 3-5 minutes, turning occasionally, until golden and crispy.
- Drain on paper towels and serve with extra ranch for dipping.
