Ingredients
  

Pasta and Chicken
  • 8 oz penne pasta
  • 1 lb chicken breast diced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
Bruschetta Topping
  • 4 ripe tomatoes diced
  • 1/4 cup fresh basil chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 clove garlic minced
Sauce
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning

Method
 

Prepare Components
  1. Cook pasta according to package directions
  2. Season chicken with salt and pepper
  3. Dice tomatoes and chop basil for bruschetta topping
Cook Chicken
  1. Heat olive oil in large skillet over medium-high heat
  2. Add chicken and cook until golden brown, 6-8 minutes
  3. Add garlic and cook 1 minute until fragrant
Make Sauce
  1. Add tomato paste to skillet, cook 1 minute
  2. Pour in chicken broth, scraping up browned bits
  3. Stir in Italian seasoning and simmer 2 minutes
Combine and Serve
  1. Add cooked pasta to skillet, toss to coat
  2. Remove from heat, stir in Parmesan cheese
  3. Top with bruschetta mixture before serving
