  • 1/2 cup cooked bacon or sausage crumbled
  • 1/4 cup bell peppers diced
  • 1/4 cup onions diced
  • 1 cup spinach chopped
  • 1/2 cup cheddar cheese shredded
Topping
  • 2 tbsp Parmesan cheese grated
  • 1 tbsp chives chopped

Method
 

Preparation
  1. Preheat oven to 350°F
  2. Grease a 12-cup muffin tin or line with silicone liners
  3. Whisk eggs, milk, salt, and pepper in large bowl
Assembly
  1. Divide add-ins evenly among muffin cups
  2. Pour egg mixture over add-ins, filling cups 3/4 full
  3. Sprinkle with Parmesan cheese and chives
  4. Gently stir each cup with fork to distribute ingredients
Baking
  1. Bake for 18-20 minutes until set and lightly golden
  2. Let cool in pan for 5 minutes before removing
  3. Run knife around edges if needed to loosen
