Ingredients
  

French Toast
  • 8 slices thick bread brioche, challah, or French bread
  • 4 ounces cream cheese softened
  • 1/4 cup blueberry preserves
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1/2 cup milk or cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of nutmeg
  • 2 tablespoons butter for cooking
Blueberry Sauce
  • 2 cups fresh or frozen blueberries
  • 1/4 cup maple syrup or honey
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
For Serving
  • Powdered sugar
  • Additional blueberries
  • Whipped cream

Method
 

Prepare stuffed bread
  1. In a small bowl, mix cream cheese and blueberry preserves until smooth
  2. Spread mixture on 4 slices of bread, leaving a small border around edges
  3. Sprinkle with fresh blueberries and top with remaining bread slices to make sandwiches
  4. Press edges gently to seal
Make egg mixture
  1. In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, and nutmeg
Cook French toast
  1. Melt butter in a large skillet or griddle over medium heat
  2. Dip each sandwich in egg mixture, allowing 30 seconds per side to absorb
  3. Cook for 3-4 minutes per side until golden brown and cooked through
  4. Keep warm in oven while preparing sauce
Make blueberry sauce
  1. In a saucepan, combine blueberries, maple syrup, and lemon juice
  2. Cook over medium heat until blueberries begin to burst (5-7 minutes)
  3. Stir in cornstarch mixture and simmer until thickened (1-2 minutes)
Serve
  1. Cut French toast diagonally and place on plates
  2. Drizzle with blueberry sauce and dust with powdered sugar
  3. Garnish with additional blueberries and whipped cream if desired
