Ingredients
  

For the Overnight Oats
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup fresh or frozen blueberries plus more for topping
  • 1-2 teaspoons maple syrup or honey adjust to taste
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 teaspoon lemon zest optional

Method
 

Combine Dry Ingredients
  1. In a jar or container with a lid, combine the rolled oats, chia seeds, and a pinch of salt. Stir well.
Add Wet Ingredients
  1. Pour in the milk, maple syrup (or honey), and vanilla extract. If using, add the lemon zest. Stir thoroughly until all ingredients are well combined.
Incorporate Blueberries
  1. Gently fold in the blueberries. If using frozen blueberries, they will release their juices overnight, creating a beautiful purple hue and infusing the oats with even more blueberry flavor.
Chill Overnight
  1. Secure the lid on the jar or container and place it in the refrigerator for at least 4 hours, or preferably overnight.
Serve and Enjoy
  1. In the morning, give the oats a good stir. If they are too thick, add a splash more milk to reach your desired consistency. Top with additional fresh blueberries, granola, or any other desired toppings. Enjoy cold!

Notes

For best results, chill for at least 8 hours. Adjust sweetness to your preference. Experiment with different milk alternatives. Layer for visual appeal. Can be meal prepped for 3-4 days. Add protein powder or Greek yogurt for extra protein.
