BBQ Chicken Salad with Creamy Avocado Dressing

Ingredients
  

For the BBQ Chicken
  • 1 lb boneless skinless chicken breasts or thighs
  • 1/2 cup your favorite BBQ sauce
  • Salt and pepper to taste
  • 1 tbsp olive oil
For the Salad Base
  • 6 cups Romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 1 cup corn grilled or canned
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • Optional: 1/2 cup shredded cheddar cheese
  • Optional: Crumbled bacon or tortilla chips
Creamy Avocado Dressing
  • 1 large ripe avocado
  • 1/4 cup Greek yogurt or sour cream
  • 2 tbsp lime juice
  • 1 clove garlic minced
  • 2 tbsp fresh cilantro
  • Salt and pepper to taste
  • 2-4 tbsp water to thin to desired consistency

Method
 

Grilling the Chicken
  1. Season chicken with salt, pepper, and olive oil.
  2. Grill over medium-high heat for 4-6 minutes per side.
  3. In the last 2-3 minutes, brush generously with BBQ sauce until glazed and cooked through (165°F).
  4. Let rest for 5 minutes, then slice into strips.
Preparing the Dressing
  1. In a blender or food processor, combine avocado, yogurt, lime juice, garlic, and cilantro.
  2. Blend until smooth, adding water one tablespoon at a time until it reaches a pourable consistency.
  3. Season with salt and pepper to taste.
Assembly
  1. In a large bowl, toss the lettuce with a small amount of dressing.
  2. Top with tomatoes, black beans, corn, red onion, and cilantro.
  3. Place the sliced BBQ chicken on top.
  4. Drizzle with remaining avocado dressing and serve immediately.
